Vampiro is a Northern MX style of taco. It can be served open faced like a tostada or folded but its a flour tortilla which is grilled to the point of crispy on the outside but with a slight chew, then layered with a melty quesadilla cheese then you're toppings. The green is just a smooth guac sauce

That white stuff is melted quesadilla cheese with a burnt crispy bit. kiss

Ah ok couldn't really see the tortilla underneath, damn it looks and sounds amazing... meanwhile I'm over here praying I can properly steam reheat a precooked lobster lol

Reheating a precooked lobster for the first time is indeed daunting, I'm expecting a rubbery mess but hoping for the best

OK, for a first try I'm going to give myself 9.5 out of 10.. I really wish we had had some low/no sodium beef broth, but alas we didn't. Next time I'll soak it in a water bath for a few hours and use a low/no sodium beef broth to get as much salt out of it as possible. But the flavor was awesome except for Mrs. GloryDayz and I not liking things that are salty. And while Mrs. GloryDayz isn't a fan of corned beef, she did say it was exceedingly OK... So I don't know if I'll ever make it again, but if I do I think I have a plan to get it to 10 out of 10...

Nice. Yah, I soaked mine for 2-3 hours in water to try and get some of the salt out. And I subbed about 20 oz. of guinness extra stout beer for half the broth.
