I have a nasty habit. If I eat lasagna at someone's house and it has cottage cheese in it, it ends up on the ceiling.

Cottage cheese in lasagna is just sick and wrong.

I use part-skim. Adding egg and two other cheeses isn't because ricotta doesn't taste good alone. Lasagne is just a rich dish made like that. To me, that's like saying, adding butter and milk to mash potatoes means potatoes taste bad or even adding butter and sour cream to a plain potato. Or adding meat and sausages to tomato sauce is because tomato sauce alone isn't good. It is. It's just different with meat. Ricotta is a whey protein, whereas your cottage cheese is casein protein. It's uses in many other dishes such as desserts like cheesecake, cannoli and even cookies.

I think it's a more authentic lasagne without cottage cheese. Just how I grew up with it in an Italian family.

Have you ever had authentic Italian ricotta, or do you just buy supermarket ricotta?

Ricotta is just a different cheese and the other cheeses taste fine too.

Okay, so you don't like it but it's still heresy using cottage cheese in lasagne to me. Each to his own.

My mom started making lasagna in the 1960's before ricotta cheese was widely available, so she used a recipe that called for cottage cheese. I grew up with that lasagna, and when I started making it I followed her recipe, because that's what I was used to. Of course I have known about ricotta for a couple decades now, and have taken to calling my recipe "Protestant lasagna".
