"i go to work at 7pm and I started them in the crock before midnight last night still harder than i want them to be."
Add a teaspoon or so of baking soda. That'll do the trick. Cooking dry beans, sometimes it is the only way, especially if you have hard water.

Need to soak beans overnight or better yet if you have a pressure cooker season and precook. Just follow instructions so you dont blow up the pressure cooker.

I did some spare ribs on the Grilla last night. There is that flab of meat on the bone side that I usually cut away. It's got the consistency of belly fat, as it has about a half inch of meat and a quarter inch of fat along it's underside. Anyhow, I used to throw it away along with the fatty/meat end piece. Last night I threw some rub on both of those when I put the ribs on. Took them off when they were tender and holy cow. It was like pork belly bbq. I'll never throw those away again. Ribs were damned good too.

Just for fun I did pressure cooker/broiler St. Louis style ribs tonight. $10 and just about an hour. And while these won't rock any BBQ competition, they were actually very good. 20 minutes in the pressure cooker, ~10 minutes under the broiler. That's simple. Woot.

Hey, knowing you can get ribs that taste this good, and this fast, might mean we do it more often than ever before. 100000% better than a slow cooker.. Next time I'm going to use apple juice and some cider vinegar to make the steam, that seems to be a popular way to do it instead of water.
