Its a work night...
Came home, took a shower and banged out boneless fried pork chops, taters and gravy in roughly 20 minutes... way more work than I like to do on a weeknight, but it'll be worth it + give me tomorrows lunch |

Fry some sausage. Chop it up. Bake some biscuits. In the pan, save 3 tbsp of sausage fat, discard the rest. Add 3 tbsp flour and cook roux for a couple minutes to cook off the raw flour. Slowly add 2 c whole milk and simmer till thickened to your linking. Add the sausage. |

Baby Lee suggested the Corned Beef this week, so I went with it. This was a dish that would never be on my radar, so I've gotta thank him for pushing me into it. I was intimidated at first, but it actually turned out to be fairly simple. Not a pretty dish, but it was good. Wife loved it. My son and I aren't big cabbage fans, but we managed.

I made Irish soda bread with caraway seeds and raisins. Won't be home for St. Patty's day this year, will be working out-of-state.
I made another American Chop Suey because it was so good last time and it's fast and easy. This time took a pick. Lots of green peppers and onions in it. |
