I haven't made tater tot casserole in some time, I'm always amazed that there is the exact number of tots in the bag to cover the top of the casserole if laid in neat rows. |

Overall it was successful. It was a hair overcooked on the bottom, but not badly. Just a shade darker than I'd have preferred. And even though it seemed like I loaded it with cheese, it didn't really register. Definitely needed more. I think I'd also prefer something more substantial than the pepperoni next time. A nice sausage would be good. |

I like my pies loaded, I would throw on some veggies. Are you thinking of putting that sausage on raw, that always kind of freaks me out. |

Created some low carb pork tostadas. Baked up some parmesan crisps, topped with avocado, pulled pork, pickled red onion and cilantro. Good use of some leftover pulled pork and pretty tasty.

A little but not bad. Maybe it is due to the pork sausage that I use. Do the same with hamburger.
I also microwave the Pepperoni for 15 seconds to take the grease out.
