I made a small Italian meatloaf weeks ago but didn't like the picture.

I use diced green peppers in mine and cover with a tomato sauce. I like broccoli as a side dish with it best and baked or mashed potatoes.

It feels like not many people eat enchiladas chili verde way.. a lot of it is a rojo (red) sauce... I feel sorry for them. Chicken with green sauce is the way to go.

I always preferred rojo. Only recently tried verde but it always looked disgusting to me before. I actually liked it. I still like both. I don't think there is only one way to go.

I like my wife's enchilada casserole shit she makes. Kinda like a lasagna style formation with layers of corn tortillas, verde sauce, chicken, cheese and jalapeños. She uses Costcos rotisserie chicken, just shreds it up and puts everything together. Super easy and good.
