Oh it does something. Adding any flavor that can be distinguished past the smoke is another. It does help retain moisture. I have tried all kinds of beer, soda, purees and water on beer can chicken. All of them help keep the bird moist. And i have never been disappointed. Think of it as a wet, low flavor aromatic. Similar to stuffing a turkey with oranges, apples, celery, etc.

baked cajun salmon, garlic prawns, steamed sparagus, button squash, and zuchinni. garlic bread.
i have done on many occasions a smoked salmon on smoker, with pork rub. it fan ****ing tastic
