Yes, it was good. The spicy brown mustard overpowered the other two ingredients. I couldn't taste the pepperoncini juice. I added two full TBL too. I would make it again using just a tiny bit of sbm.

Yea, it's all preference with how much of each you want to add. Adjust and find a good spot. I love it as a sauce though. I'm a mustard slut so I go heavy with it.

I love chunky chicken salad sandwiches whether curried or traditional or waldorf style.

Those were the best foundation for chicken salad. A sliver of sharp cheddar between flatbread and salad, a sliver of Vidalia on top. Perfection. Besides curried and Waldorf, Craisin and walnut is another favorite. They were just $1.99 per basket. Trying to find a suitable replacement at a comparable price. Finding either glorified saltines at around the same price, or 'artisan' crackers at twice the price.

So I stuffed some chicken breasts and roasted them.
diced up sun dried tomatoes, fresh basil, garlic, onion, and capers, and sauteed all that in olive oil. Split the chicken breasts, and stuffed with the sun dried tomato mixture. Place a thin slice of mozzarella cheese over the mixture in each "pocket" in the chicken. Placed the breasts in a roasting pan, covered them all with marinara sauce, and roasted. I forgot to take a pre devour pic, so here is a pic half way through dinner. Served with a spinach salad with maters, onions. |

Last Night
Catfish, Tartar Sauce, Jalapeño Hush Puppies and my Fiesta Slaw.
I did it oven fried to cut the calories down from the oil. I know you guys prefer it deep-fried though. It's a bit of a spicy batter and dredged fish in buttermilk with a touch of Tabasco for 15 minutes. Added some Old Bay Seasoning to cornmeal batter. The Hush Puppies were awesome. I kept eating them before serving them they were so good.
