Yeah, curry infused soup with celery, diced apple, chicken, chicken broth, coconut milk, with toasted coconut and cilantro to garnish. Nice summer soup that you can easily adjust the spice level.

I had a recipe at one time, but its really dependent upon your curry preference, so I wing it at this point based on the season and my craving. Saute the celery, add the diced apple, add your curry, cook for a bit, add the broth to soup level, cook for 15-20 min, balance it out with coconut milk, add your cooked chicken, simmer a bit, dish and garnish.
I believe Pioneer Woman makes one, so there's a ton of recipes out there. |
