For those that don't know, there is no right or wrong way to make ceviche. It's a very regional dish. Some use orange juice/lemon juice, some lime juice. Some put tomato juice in it, some don't. I love it and make large batches of it, as it gets better over several days in the fridge. |

My mouth is watering looking at that photo!
Love me some pork tenderloin and the accompanying dishes look great as well. Had grilled pork chops that were brined last night and they were incredibly moist. Also a cold grilled corn relish, mashed red skins, and broccolini.

Guess I will include my meal I cooked tuesday although no pics because it ran over later than i expected had hungry grouchy kids. I cooked spatchcocked mustard roasted chicken in cast iron skillet. Turned out moist juicy and delicious they kids approved. I watched Jacques Pepin on his pbs show last weekend seen him do this and it looked easy. Only thing is he used a oven safe non stick coated skillet that I did not have. I remedied this as a ordered from Bon Ton a 12" non stick coated steel All Clad skillet for 50 bucks. The cast iron did not render the juice in pan for the sauce like his did I roasted to 165 internal at 450 oven. He said about 30 minutes mine took all of 50 cleanup of that pan was a bitch but worth it. All I can figure is the cast iron was so hot it continued to brown it but did not burn but cooked down.
Here is the recipe cant find his pbs you tube if anyone is interested. |
