When I listen the Chiefs games on radio over the internet, I hear Garozzo's advertised all the time and that Chicken Spedini is all they talk about as the inventors of that dish.

Pretty simple and the plating is trash but I liked it. Grilled chicken with BBQ sauce. Baked potato. Cucumbers from moms garden and fried squash. I slightly overcooked the chicken but it still turned out damn good. |

One of my favorite low carb dinners tonight. Spiced chicken breast of your choice cooked in cast iron. Roasted stuffed Poblano peppers with refried beans, cheese and topped with jalapeno slices.
I "roast" the peppers in the toaster oven 5 minutes a side on broil setting. Cut open and fill with beans then cheese. Put back under broiler for 5 minutes. Plate and top with jalapenos. Peppers come out very soft and with great flavor.

Grilled a burger and a couple hot dogs. Rolled the hotdogs in BBQ sauce. If you aren't doing that to your hot dogs do it now.
Wife cooked up fries and made cucumber and onion. It was good but damn it I'm miserable now. |

Relatively and loaded with fiber. Much lowers carb than a side of rice or pasta. It's not a no carb meal, just low carb and the carbs are coming from a good source. This dinner has under 20 grams of carbs. That's way lower than how most people eat a meal.

What I like to do with fresh jalapenos is seed and split them. Fill with cream cheese. Place in toaster oven on broil until cream cheese is melted. I Top with something called Devil's Salt, which is a local spice made with Habanero peppers, salt and garlic. Broiling them gets the jalapenos softer but still with a bit of a crunch. It's a great and easy snack. Just wear gloves when cutting them!
