I had a chile omelette for breakfast which is loaded with protein. Can't have too much protein as I have gout.

Spaghetti squash is great. I cut it in half, scraped out center and brushed with olive oil. Placed in the oven at 400 for 45-50 minutes, until it was soft. Scrape out the squash with a fork and you're done. Very simple and delicious. Throw a little salt and pepper in for taste with your favorite spaghetti sauce.

It was somewhat tough for me as well. I think size has a role in that issue. Mine was a smaller squash. I don't think I'll eat spaghetti noodles again. After I scrape out the squash when it's done, I'll put it in a pan to cook out the moisture.
