Looks pretty good. I think I once saw an Alton Brown episode where he mimicked the tandoor oven using a clay pot or something. But i don't really need it to be perfect, just the flavor would be nice.

I'm in Richmond VA and next to my hotel in the same parking lot is a Longhorn Steakhouse. So inexpensive I'm shocked.

Been here 3 nights in a row.

1st night with my boss I had lamb chops (5), grilled corn w crema, and rice pilaf. Started with dirty Tito's martini w 3 olives. No apps or dessert but my boss wanted to chat and we each had two Grand Marnier's neat to end the night.

Last night I took a business colleague here and I had the porterhouse with grilled corn again and a baked potato. Started with a beer. He brought cigars and a bottle of Chivas Regal Ultis Blended Malt Scotch Whisky.

Tonight I am solo and having the lamb chops again PLUS one boneless pork chop. The grilled corn and roasted brussel sprouts with bacon. Had a Tito's dirty martini to start and now having a La Crema Pinot Noir. Going with strawberry shortcake for dessert.

What a week.

Not my best offering, I've done better with full briskets done a lot longer. I knew doing just the flat was going to be a bit of a challenge, I read a lot about it, but man for a 6 hour burn (hot and fast) this was amazing. Given that we're only two in the house these days it's something I need to master, but this first try was a complete win. All I'll change next time is the temp will be 225°-250° until 175° internal, wrapped in butcher paper until ~210°, then 4-5 hours resting in a 175° oven. That should perfect it more.
