On the ham? I used brown sugar, honey, and a little cinnamon.

I like it I like it a lot even I finished up a honey ham recently and burned out on ham ham smitches and Ham beans.
A couple of slices of white bread triangle cut and you have a Buzz meal! I miss my old buddy Buzz. I hope he is still out there enjoying delicious simple meals. I fear he has gone to meet his maker though.

The upgraded Aldis have been offering a bunch of fancy cheeses and meats. Even alcohol at some locations.
I highly recommend this one. It's crazy good.

Sauce recipe?
Homemade tortillas? I don't do enchiladas because A) I haven't gotten the sauce quite right and B) the store-bought tortillas just turn to mush. But man, go to Mexico and have them use Grandma's old tortilla recipe and you can dunk those things in a bucket of ice water and they'll still maintain their form. And if you ever got that recipe from them somehow, they'd bury you in a hole in the desert before they let you get back home alive with it. I've found some okay tortilla techniques/recipes but I'm pretty sure when it comes down to it it's nothing more than feel and lard. Lots and lots of lard.

Tortillas I get from a local company named Yoli Tortilleria. They make some great stuff. And I can't make tortillas worth a shit. I used normal cheddar cheese to mix in the enchilada meat. But the melted cheese on top, I used this awesome Longhorn colby jack from Alma, KS cheese shop. Made a nice melty finish on top.

During my extended stay in Bonaire Mrs. GloryDayz decided to get new kitchen appliances, including an oven.. So after a morning of doing an initial cleaning and burn-in I decided to do oven spare ribs. Hardly perfect, lots to learn about this new range/oven, but I can't blame the range for me over-spicing them.. Oh well, a little scraping made them taste acceptable, but the texture was spot on..
