I agree with Scott. Love an Italian beef sandwich. I've never had Portillo's, but I live in Jay's Beef delivery territory. They'll bring a dipped sandwich to my door and I'll crush it leaned over the sink like its nothing.

I'm going to do that. For some reason I thought that Portillo's in the city was way far from me, but I pulled it up on the map and its not as far as I thought. Kind of close to my wifes work actually, I may see if she wants to meet there for lunch. I've had their dog, but never the beef sandwich.

I need a good way to make panade without a food processor. Whisking by hand just leads to a clumpy mess. Ideas?

Yeah, I've tried those. The recipe calls for breadcrumbs and heavy cream, soaked for 10 minutes. I think the ratio is too little on the cream side.

Yes, which is why I suspect that the liquid to crumb ratio is off. Just a clumpy mess.
