I know how chain restaurants work...
this is a different beast
(although I did clear $50K at a BENNIGANS in Chicago when I was 22...claiming 75% of my tips or so)...
people don't realize that good servers can make a good wage (especially in high volume stores)...
but you can only last so long in a chain restaurant without going insane
