It's not really a thing, it's pork belly, a piggy-pop, and with is being slow-smoked at 275 for ~3 hours, then simmering in a covered pan butter/brown sugar/honey for another 2 hours, then a 5-minute apple jelly/apple sauce/BBQ sauce glaze, nothing about it is healthy. I just buy a whole belly at Costco, cut and freeze 3/4ths of it, so it's a rare treat. But man oh man is it a treat... I do this Malcolm's method:
