Cute cat - they definitely take a while to come out of their shell sometimes! We adopted a very skittish cat a few years ago, and it took a couple of months before she was willing to actually sit with us. She's still super skittish with other people, but she's also a huge cuddle bug with us. This is how she spends about 50% of her life these days.
