I do portion my food.

The taters were a Friday night treat. I usually don't do empty carbs like taters but these were a wonderful indulgence.
My wife wanted the thinner end since it's a little less rare, but I won't hold THAT against her (but I did point and laugh)...

I'll add that flank, skirt, and flat iron steaks that are marinated in a vacuum marinator, cut cross-grain on a steep bias are amazingly flavorful and chewy. 20 minutes in the vacuum tumbler and the marinade is pulled into the middle of the meat.
