I think Mahomes saw how badly the CB was beat and threw it as a stop, but MVS doesn't have eyes in the back of his head - he does not (cannot) realize that the CB has completely lost track of him like that. He has to assume reasonably sticky man coverage and taking that to the sideline there is the right call.
Throw comes in underneath the safety and in front of the CB. It's an easy completion.
