Kosher Salt/Pepper on the Roast and Sear in a Skillet with Olive Oil and a bit of Garlic.
In the Crock Pot I'll be adding about 2 cups of Beef Broth along with Quartered Red Potatoes and Carrots. I usually add some minced garlic along with some chopped yellow onion. Salt and Pepper as well.
1 Bay Leaf and a few sprigs of Rosemary from the bush outside. (I have an gigantic Rosemary bush). Crock for about 10-12 hours on low.
Very simple recipe that is slightly modified from my Mom, but it always turns out consistent and delicious. Left overs I'll shred the beef and make tacos this week.

Very traditional, nice... the simplicity of a good roast is hard to beat
