I'm trying homemade ramen today. I have a nice broth to make, and I will roast some pork belly. I couldn't find real ramen noodles, so I'm doing the Serious Eats makeshift ramen noodles with angel hair pasta.

Broth had yellow miso, soy sauce, mirin, lemongrass, green onions, garlic, chicken broth... Should be good.
