Unadulterated Mayo is fine on the shelf. If you mix so much as a sprinkle of seasoning, let alone meats or vegetables into it, refrigerate immediately.
I didn't believe it at first, but I bought two jars, one on the shelf and one in the fridge. Months later, absolutely no difference.
If you have cheap mayo, the oils will actually be the first to turn. It yellows and gets a little nutty like rancid olive oil. But Hellman's is as shelf stable as anything outside honey.
Most anything you can find in a packet [ketchup, mustard, BBQ, jelly, Tabasco, mayo, honey, etc., of course sugar and nondairy creamer] is shelf safe in an airtight container.
