Typically. You vacuum seal the food in the bag, then cook in the sous vide. When ready to finish, re-season and sear it off.
They are supposedly washable and reusable. But 200 of them was like $14, so I just chalk that $.07 up to prep costs.
That pic above was the second steak, which I left in the bag. When I want it later in the week, I'll drop back in the sous vide for an hour and then sear.
