What I did after the first one was bit underdone. I brought the meat up to room temp (whatever on that), put it in the oven as it preheated, went 5 min long on the cook time and let rest for 10 min.
I saw a taco recipe using this I might try.

Buy the unseasoned ones, run some season salt and pepper and grill over indirect heat. I obliterated those in college when pork was cheap. I had people convinced I could actually cook. BAAAHAHHAHAHAHAHHA
