I've always wanted to visit Thailand, but when I looked into it most recently it seems very touristy. Given the choice today, I might choose a trip to Vietnam over Thailand.
As far as Europe, London is a visit to do once, Amsterdam is cool. France is amazing (I've only been to Paris/Lyon/Arles thus far) and Spain is Awesome (been to Barcelona, Madrid, Sevilla).

Out of those my favorites were Rome and Florence. We still felt like we didn't get near enough time in Rome. Florence might not be as good if you don't like art, we did a lot of museums there.

We went to Italy last summer for 2.5 weeks. 4 nights in Rome, 2 nights in Naples (Pompeii/Amalfi), 3 nights in Tuscany, 3 nights in Florence (including day trip to Cinque Terre), and 3 or 4 nights in Venice.
We loved Venice, Tuscany, Cinque Terre, and Amalfi areas. Rome was crazy with so much to do and see, but very busy. We didn't care much for Florence. We loved and appreciated the art (Uffizi, the David, Duomo, etc.) but the city itself seemed fake and touristy.
