To me the hard handles are a must, I got a newer set with the more rubberized handles (kitchen aid brand) and the handles got tore up badly pretty quick...
went back to my good old henckels...
I'm thinking about getting a bigger set soon, I love them...

You have to be careful with both Henckels and Wusthof brands because they carry a pro-line and a non-pro line. I didn't see that those were pro quality. The pro line is going to cost you more. I had a Wusthof non pro paring knife as a gift one Christmas and the handle broke about 6 months later. The pro line naturally is going to cost you more but you get what you pay for.
