The one I made over the weekend turned out well as a pizza sauce - from Cooks Illustrated, but it's very simple, and I was a little concerned over its simplicity.
3 tbsp. Olive oil
3 cloves garlic, minced
28 oz. can crushed tomatoes
Sauté the garlic until fragrant, 30 seconds or so, poor in the tomatoes, boil and simmer on low for 29 minutes.
Turned out really well. I added some fresh chopped oregano because I had it in hand. Really tasty.
