I use part-skim. Adding egg and two other cheeses isn't because ricotta doesn't taste good alone. Lasagne is just a rich dish made like that. To me, that's like saying, adding butter and milk to mash potatoes means potatoes taste bad or even adding butter and sour cream to a plain potato. Or adding meat and sausages to tomato sauce is because tomato sauce alone isn't good. It is. It's just different with meat. Ricotta is a whey protein, whereas your cottage cheese is casein protein. It's uses in many other dishes such as desserts like cheesecake, cannoli and even cookies.
I think it's a more authentic lasagne without cottage cheese. Just how I grew up with it in an Italian family.
