He does seem to be good at making adjustments at halftime though. We have been a much better second half team than a first half team during his time here. And you do have to give him credit for coming up with a new offense midseason to cater to Tebow's strengths.

He did not come up with that offense. He tried to force Tebow into a conventional offense, then when it did not perform well, Tebow had to teach the offense how to run the option. Look it up, there were articles about Tebow teaching his teammates what to do.
Similarly, when Manning arrived, he tried to force a conventional offense with almost no hurry up. When the offense wasn't as good as it should have been, Manning had to teach the offense how to run his system.
I'd be surprised if the halftime adjustments were due to anything McCoy did rather than Manning.
