Did you take your child out with you to dinner?
|
Got a really great knife set at Sam's Club today. Also came with a set of steak knives.

There are 3,000 people in my county. It's understandably difficult for grocers to appropriately stock perishables to my liking. Also, I wouldn't call where I am "farm country". Average rainfall is 16" with remarkably low humidity, when coupled with the absurd temperatures in the growing season lead to ridiculous evapotranspiration rates. Accordingly, farmers markets and the like are more difficult to establish and sustain. |

Isn't that what is mainly grown out there? |

That's just here though. As you move east there is significantly more rainfall. I read somewhere that there is more rainfall variation from the state line to Wichita than from Wichita to the Atlantic Ocean. |
I'm going to make her meat loaf probably today. She's so damn hot and I love how she says her last name. I should have added a sexy woman's voice in the fetish thread.

Went to all the local farmer's markets today. The winner of the day... some chuck eye steaks and marrow bones from the American Wagyu grower in Selma.
Tonight I'm doing some thick cut pork chops with wild mushrooms, served with petite carrots and creamy grits. Tomorrow will be the Wagyu. |
Yeah I've had my WGPs for several years at $40. I don't intended on replacing them anytime soon. Spending that much just boggles my mind unless you're very wealthy.

We have a Fiestawear knife set like the one below because my wife loves Fiestaware for some ****ing reason. Better knives than others I've owned but still not super great. Sharpen them up and they do pretty damn good though. https://s-media-cache-ak0.pinimg.com...11151b1ee8.jpg |

And the knife I reach for most often is the $40 Victorinox. It holds an edge as good as any I've ever had, balance is beautiful, and the grip is great. |

Buy it broseph.

Keep in mind, it's sharpened to a 15-degree angle (vs. 22 for the Wusthoff you have), so unless you're hand sharpening, you won't want to use a device designed for Western-style knives. |

If you have Eastern and Western style blades, this is a great investment: http://www.amazon.com/Chefs-Choice-A...PHNA9H4S0SDJK4

I bought my best-performing knife at Wal-Mart! Not that I have anything "high end" in terms of knives, and even use the sharpener in the can opener to sharpen them all, but I sharpen them before every use, and they cut very well (for that use at least)...

This is one thing that really burns me up.
I just saw another "food expert" explain that prime rib is USDA prime beef. Even the "smart" people are stupid. The "prime" in prime rib has nothing to do with the USDA grading of beef. It's called prime rib because it's cooked as a "primal" cut. Can prime rib be from USDA prime beef? Absolutely. Can prime rib be from USDA choice beef? Absolutely. Vent over. |

Gonna make meatloaf and some garlic mash potatoes.
I'm using Laura's Vitale's recipe I posted except I added 1 TSP of cayenne pepper to the glaze. Sweet and spicy :thumb: |
I have two American Wagyu chuck eye steaks salting.

Burger, whole grain gluten free bun
Sauteed, diced onion, minced garlic, organic zucchini and diced red peppers. Salad with blue cheese crumbles and creamy blue cheese dressing. Beer. Appetizers: half teh SO's beet smoothie, had half of my kale smoothie. |
I was put on the Miserable User List for some immature comments about our offseason, so I doubt I'll be able to post pics.
Please take me off the list and I'll be a good boy mods :thumb: |
BTW, Laura's meatloaf is similar to my Mom's but ours is a bit more Italian. We use the Parmesan cheese but we add diced green peppers into her mix of egg, milk, crumbs and parsley. We also use some ground pork and veal. I thought it was interesting she used only beef. Her glaze is American. We used just tomato sauce on top. Sometimes my Mom would experiment and add cheese on top of the tomato sauce other times bacon. I usually steer away from sauces made with ketchup but I'd like to try her glaze since she cuts the sweetness down with tomato paste. Think I might give her whole recipe a try for a change with just beef...since the pork has the fat in in that she says dries a meatloaf.
|
The steaks were OK, but I've had just as good from the store. The one thing I'll give it, the little fat pockets that were there, just melted in your mouth. I don't regret doing it, but I probably wouldn't do it again.
The sauteed yellow and zucchini squash from the farmer's market were great. And my wife's peach cobbler with peaches from the farmer's market is outstanding. |

How was the grilled squash? Looks tasty. |
Good. Grilled squash coated with a bit of evo is a staple for us in the summer.

I dug out the meat grinder tonight and made some really tasty ham salad.

Aldi spaghetti, prego traditional sauce and Hy-Vee breaded ravioli. I am fat and happy and didn't lift a finger other than to feed my face.

Because I had two slices of pizza for lunch. Oh my! |
Those of you talking about knives, and not wanting to spend the money for a Cutco set (Great knives, by the way, and they've lasted in great shape since the '80's, for my family), might want to take a look at the Cook's Illustrated America's Test Kitchen a la carte knife set.

Dinner was a turkey. First, I popped the thighs out of joint. Then, I pulled the skin almost entirely from the carcass, in order to get a full rub on as much of the meat as possible. I rubbed in a thick paste of butter and seasonings, with lots of garlic, all over the inside, and outside of the bird.
At the end, I went with wine-infused pan drippings instead of a full gravy. Delicious. |
