I think obviously grasping their needs is key. You're right with what you said, but I always encourage the interviewer to have a list of questions memorized.

I've gotten jobs I had no earthly right getting over candidates who were far more qualified by acting like I could care less to get the job.

One needs to have some questions ready to ask the employer. Just as many as they ask the person interviewing.
