Made some surf and turf today. Great day outside. Steak with some shrimp, scallops, and onions over the top. Good meal.

Last night I cooked a Pork Tenderloin with a simple dry rub of onion powder, garlic powder, cumin, salt and pepper. I cooked the tenderloin for about 22 minutes in a stainless skillet in a preheated oven at 450 degrees for the first 15 minutes then turned it over for the last 7 minutes. It came out great.
I also made fresh Green Beans Szechuan style in my wok with soy sauce, lots of minced garlic, pepper, and lastly hot chili sesame oil. It gives the dish some great heat that subtly pops out. I did the same flavoring for the red and orange peppers and white onions I stir fried. Once the pork rested, I cut large pieces and then recombined with the pepper and onion mix in the wok to finish. Lastly I had wide egg noodles with butter, salt and pepper finished with grated parmesan cheese. Also had a Flying Dog Raging Bitch IPA while cooking and then a glass of white wine when eating. One of the best meals I ever made! :p |
I NEED A QUICK "ASIAN" RECIPE FOR A POT LUCK ON THURSDAY. IT CAN BE ANYTHING. JUST NEEDS TO BE EASY SINCE I DON'T WANT TO COOK A TON ON WEDNESDAY NIGHT.

I'm going to do Teriyaki boneless, skinless chicken thighs. Not sure if I should sear them on both sides the night before, then finish in the oven the next day at work for pot luck? Or just do it all in oven the day of the pot luck?

Excellent chicken recipe that'll smell up the house with deliciousness. 2 boneless skinless chicken breast 1/2 cup of your favorite salsa 1/2 packet of taco seasoning Shred it up, eat it as a taco, burrito or whatever your preference may be. |

Last night I did a real simple dish: sausage and onions with garlic cooked in Gates BBQ sauce on Martin's Potato rolls. Par-boiled the sausage for 5 minutes, then let cool down, cut into 1" chunks, sauteed onions and minced garlic, removed to bowl, then added the sausage back in pot to fry for 5 minutes, strained off all the grease and recombined everything then added Gates BBQ sauce and a dash of red pepper flakes, cooked a few minutes then had three sandwiches with Simply Lemonade.

Tonight is a lesson in making something from nothing...
4 leftover pieces of garlic bread 3 leftover Johnsonville Italian sausages 1 can of diced tomato 1 handful leftover mozzarella 3 simple ingredients is all it takes to make a killer sammich. The tomatoes are making a marinara right now, just a pinch of red pepper for zip, just a pinch of oregano for flavor and two tablespoons of sugar because canned tomatoes lose their natural sweetness, and marinara is slightly sweet anyway. Boil the brats for ten minutes then pan grill in olive oil for the same to get some browning. Toast the garlic bread on the griddle. Split brat in half, top with marinara and cheese, put back on the griddle and put under the broiler until the cheese is perfectly melted... throw a few leftover pepperoncini and chips alongside it, and yeah... a pretty damn good treat from a bunch of leftover shit. I can make a nice meal out of damn near anything if I have a few basic ingredients. |
I had to stop on my 3 hour drive home for dinner. I stopped at Cody's Roadhouse and had my favorite meal there. Herb and onion encrusted salmon over rice pilaf with a sweet tater and salad. Only they never encrusted it with the onions this time. It was just bread crumbs. So I had to complain and ask for a redo. Still no encrusted onions but at least they put the bread crumbs on the side the second time. J, wtf? Never had that happen there before.

I didn't do the chicken tikka masala last weekend, so doing it today. Make a few change ups, including smoked paprika and I took my blow torch and charred the outside of the yogurt marinated chicken.

Dinner for mama on Saturday night was my Cioppino (seafood stew) served in a sourdough bread bowl I actually poured more of the soupy base over the bread bowl after the picture, but it didn't show all the seafood in there (littleneck clams, lobster, shrimp, scallops, cod, and crab legs).
Then last night it was quite a bit lighter, with a kale soup. It's garnished with kale chips I made and a small bit of bacon. both were great, but I'm not so good with pics |
