Well, I was supposed to have a friend of my daughter's here for dinner last night, but then her boss asked her out to dinner at last minute. She hadn't seen him in a year.( She works remotely online from college.) Since I had all the ingredients, I made this tonight instead for just us as she went back to school today. It came out great. 'Cept the condition of the corn could have been better—though the flavor was terrific. I'll have to work on that. So my camera girl is gone. But it looked like this.

Mexican Quinoa - One of my favorites. With lime, garlic, finely diced jalepeno, diced red pepper, scallions, pepitas and cilantro.

Mexican corn on the cob: butter, sprinkled with chili powder, Cotija cheese, lime and cilantro. Yum!

It's kind of a gamey taste but I like that. Can't really compare it to anything you might have had. You can cut that gamey taste down with a burgundy type sauce and it makes it very savory. It's much better than antelope or deer IMO.
