I have a nasty habit. If I eat lasagna at someone's house and it has cottage cheese in it, it ends up on the ceiling.

Cottage cheese in lasagna is just sick and wrong.

I use part-skim. Adding egg and two other cheeses isn't because ricotta doesn't taste good alone. Lasagne is just a rich dish made like that. To me, that's like saying, adding butter and milk to mash potatoes means potatoes taste bad or even adding butter and sour cream to a plain potato. Or adding meat and sausages to tomato sauce is because tomato sauce alone isn't good. It is. It's just different with meat. Ricotta is a whey protein, whereas your cottage cheese is casein protein. It's uses in many other dishes such as desserts like cheesecake, cannoli and even cookies.

I think it's a more authentic lasagne without cottage cheese. Just how I grew up with it in an Italian family.

My mom started making lasagna in the 1960's before ricotta cheese was widely available, so she used a recipe that called for cottage cheese. I grew up with that lasagna, and when I started making it I followed her recipe, because that's what I was used to. Of course I have known about ricotta for a couple decades now, and have taken to calling my recipe "Protestant lasagna".

ANd I have access to some of the best cheeses in the world...I live in an area renown for Dairies and cheeses...

My philosophy is this:

It was "tradition" to scramble eggs with cheddar....

I just believe in tradition to a POINT and I started thinking....hey...ricotta is kind of MEH as a cheese and there are so many other options.....

SO for me I find a really fresh large curd cottage cheese with salt and pepper tatses pretty darn good, better (to me) than ricotta........so I tired it...

I like it better...besides.....

Heres the thing...the recipe I gave was supposed to be an EASY recipe for kids and wifey

hence why I mentioned no-boil noodles.

NO WHERE did I say it was the best or most authentic. My kid loves cottage cheese and we keep it in the house 24/7. We dont normally have ricotta.

I was merely suggesting an easy recipe, that also tatses good. Imo , Id rather use shredded pizza cheeze and jack than ricotta.

But w/e.

I was only trying to give whoever that was a VERY easy recipe involving common items around the house.

I have had plenty of lasagna made with cottage cheese but I prefer the ricotta. But don't get me wrong I wont push the plate away and have a hissy fit because of the cheese used. I will wolf it down and be happy to have it. Its lasagna for crying out loud its good either way.

you could do the same mix that you said you did

(ricotta, mozerlla, egg + parm)

you could sub out the ricotta and put in the cottage cheese and a little salt and pepper and you probably couldnt taste all that much difference

yes if your goal in cooking is max calories I think whole curd cottage cheese has less calories than ricotta

I've heard, and read ricotta is not used in Italy or parts of Italy. I've read it's more Italian-American. My family doesn't do it that way. So I am going by that as heresy.

Now do the lasagnes with cottage cheese you've eaten had something added to it? I can't imagine eating it plain in a lasagne. It would just be bland.

I've worn lasagna out and the family doesn't seem to care for ricotta cheese. I did have some amazing cheese ravioli at a pot luck, with what tasted like a pizza sauce. I'm going to try a rendition of that.

I guess its typical layering probably mixed with egg and different cheeses. I really dont know other than it was just a bit different texture. I love all lazagna other than the box microwave junk.

In our protestant lasagna, we layer 1) noodles, 2) Parmesan, 3) Meat sauce, 4) cottage cheese, and 5) mozzarella cheese.

I had to eat out again. Up all night had deadlines and barely ate all day. I had fish and chips without the chips but with these awesome green beans, cole slaw and order a side salad. I went to that place I went last Saturday when I had the shrimp and grits.

When I got home I had one of my reindeer cookies and I got a pic of that for y'all.

Okay, I went and watched a video of someone making a lasagne with béchamel. Gotta admit it looked good, a creamy kind of lasagne more. It was just BHG, but theirs had a ricotta layer that was topped with the béchamel.

I think I got used to my moussaka only having it, but this does look worth a try.

Oh, that sounds like one of my skillet meals where I toss everything in that pan, using up leftover veggies, ground beef and the chips sound just fine. Sometimes I use rice, sometimes pasta whatever I'm trying to finish off. I use chips and bread crumbs on top of some casseroles. So that's a tasty and satisfying meal. Love that meal for weeknights. Quick and easy too.

For me the 4 keys to great lasagna

Fresh crushed tomatoes simmered with garlic, onion red wine and olive oil
Good crumbly Italian sausage, preferably with fennel.
Quality dry ricotta with fresh basil folded in.
Mozzarella that browns well and has a good chew when melted.

I followed her recipe. I didn't use white wine and it still turned out awesome. I also couldn't find dried mushrooms, so I just put baby bellas in beef broth and simmered. It was really good man.

Season scallops with salt and pepper, medium high heat with evoo and butter. Use oyster sauce (my idea, so **** her) for a beautiful presentation. Really compliments the scallops.

I'm new to the grass fed thing, grandparents give all the grandkids a butchered cow for Christmas every year however we want it divided meat wise.
