Not much time to cook these days, with all my running around and travel.
Did manage a quick baked chicken pesto ( store bought pest–so FMB can shoot me). Had to find lefover veggies so sauteed egg plant and mushrooms and then some sauteed spinach. That's it. No photo, cause rushed and memory card is in computer. |

I'm doing a lightly pan-fried cubed chicken breast in a light garlic lemon butter sauce. I've done this with shrimp before, and it's outstanding. Also very low sodium.
