I went to the store tonight before ice Armageddon and bought stuff for enchiladas, I can do chicken or beef. Anyone have a great recipe I should try? I was leaning towards beef and making fried chicken later. Also if you have a great fried chicken recipe, hit me with a brick.

Excellent chicken recipe that'll smell up the house with deliciousness.

2 boneless skinless chicken breast
1/2 cup of your favorite salsa
1/2 packet of taco seasoning

Shred it up, eat it as a taco, burrito or whatever your preference may be.

Had this earlier in the week. Really easy and very good. Could use on salads, in sandwiches, for tacos or burritos. Very versatile and cooked on high in 3 hours.

$1 burrito from one of my favorite stands in MX. Had one every morning last week. This one is a chorizo and papas with verde.

I feel you. We have some good Mexican options in KC, but nothing I can walk to with a dollar like MX.

Yep, everyday. A family slangs them out of a gas station. They're all breakfast. Bean, egg/bacon, carne asada, and chorizo/papas. They're usually gone by 9:30am. Lol, they used to be 2 for $1 10 years ago.
