Well I am all that carnivore thing, but I'm kinda partial to lifting too, and definitely a hater of doctors (because the suck ass and tell you nothing that you didn't already know because of Google!!).

Got pork loin for 1.88 a lb yesterday.

Made low carb slow cooked pork loin with low carb bbq sauce.

The sauce needed a little bit after cooking with the pork for hours. Added some chipotle cholula and it was good.

I'm a crock pot pulled pork maker too. It's just easier and with a crock pot bad, the cleanup is mere minutes, so yeah, it's crock pot.

Meat

1 large bone-in pork shoulder roast (butt end is best) with skin.


Base

4 cups cider vinegar
1 1/2 tablespoons hot red-pepper flakes
1/4 tsp praprika
1 1/2 tablespoons brown sugar

Preparation

Boil the vinegar with the brown sugar, red-pepper flakes, 2 tsp salt, and 1 Tbsp pepper in a pan, stirring until sugar has dissolved, set aside to cool.

Put away some of the vinegar for the sandwiches - a cup or so.

While the sauce is resting, score the pork fat in a cross pattern, cutting through skin and fat but not into meat. Pat meat almost dry and rub it with either salt/pepper or your favorite portk rub.

Let it sit in the fridge for an hour, mayber three (!!!!), then into the covered crockpot on low for 8-10 hours sitting in that now cooled and rested base.

just put it in with no liquid at all and it will turn out great...

It will be floating in it's own liquid in an hour in the CP and that's what makes it juicy ... Add water and it will be dry as shit

I like the grill option because I like the cooked skin and that will be easy while I'm watching football.

Got an iPhone so I will try to post more picture. Made homemade guacamole at halftime. I don't really measure anything and just season to taste.

3 large Hass Avocados
1-2 fresh squeezed lime juice
salt
garlic salt
Chili Powder
Jalapeno paste
minced onion
minced Hatch Chile
minced jalapeno

I like it fairly spicy with a good hint of Lime.

Those look freaking awesome. Speaking as someone who is pretty new to cooking protein, I can say that I'm always amazed at the amount of charring/blackening that can occur and things still taste freaking delicious (if not even more delicious).

People who cook with shitty cook wear or never on a grill never really get to understand that.

We do this pretty often when blackening fish. I can't handle the freaking smoke in our house. It's obnoxious. Go for it (which I see you did with great results).

New to cooking protein? Were you a vegetarian before?

Yea I darkened two of them to see if it tasted awesome since it was cast iron and wife said skin on the ones that looked kind of burnt were the best.

I also like to get a good crust on my burgers when I cook them too. I like them better that way as well.

I at the leftovers of my chicken thighs and halved some great tasting vine ripe tomatoes. Put them under the broiler, topped with sharp cheddar cheese until golden brown and then topped with garlic/herb seasoning. Great and easy way to get great taste from a tomato.

Leftovers? My wife and I plowed through 4 thighs. I couldn't stop thinking about the remaining half thigh until it was in my belly.
